Brian’s Balsamic Potatoes
Rooster potato- 2lbs
Red onion – 2
Olive oil – 2 tbls
Butter – 6oz
Preheat the oven to 180degrees.
Peel the potato and slice into chips.
Peel and quarter the onions.
Fry the potatoes and onion in oil and butter until they turn brown.
Place in roasting tray, season with salt and pepper and sprinkle with balsamic, cover with foil and bake at 180degrees centigrade for 30mins.
Remove foil and stir. Sprinkle with balsamic and bake for 20 mins uncovered.
Sprinkle with grating of parmesan and serve.
